Apple Pay random security check

On the two separate occasions whilst visiting McDonalds I had the same issue with Apple Pay.....

When using Apple Pay to purchase the reader stated "Random security check, card required" or similar.

Doesn't this defeat the purpose of Apple Pay?

Why has this happened, only at McDonalds, and can it be rectified?

The card setup is Am Ex credit
